Cherry Tomato Chutney


2 pints/small box cherry tomatoes, make a cross on each

4 tsp oil

2 tsp ginger chopped/grated

2 green chili slit

8-10 raisins

1 tsp Salt

1 ½ tsp sugar

¼ tsp black pepper

½ tsp roasted cumin powder

1 tbsp mint chopped


·      Bring to boil 3 ½ cups of water, add tomatoes and cook for 2 minutes, uncovered. Drain in a colander. Cool and peel

·      Heat 4 tsp oil in a pan for 30 seconds. Add ginger, green chili and raisins

·      Add peeled tomatoes, ¼ cup water, salt and sugar and bring to a boil and simmer for 5 minutes.

·      Add black pepper, roasted cumin powder and mint. Mix well.
