Recipes - Cucumbers And Cukes

Stuffed Cukes

6 small cukes
2 tbsp of Coriander seeds
4 dry red chillies
1/4 cup roasted peanuts
1 tsp Amchur Powder

Dry roast the spices and peanuts and grind in a blender. Add amchur powder and salt. Make small slits in the cukes and fill with this blended spices. Add 2 tbsp of olive oil in a pan and  arrange them in a single layer. Cover and cook for 15 minutes till cucumbers are cooked and infused with the spices.

Serve hot with chapatties

6 small cukes or 1 large cucumber
Tamarind paste - 2tbsp
Salt - to taste

Turmeric – 1 tsp

For Tempering
Chana dal - 1tsp
Urad dal - 1tsp
Mustard seeds - 1tsp
Curry leaves - 6-8
Asafoetida/ Hing - ¼tsp

1 tbsp grated gur/ molasses
Green chilies - 4-5
Red Chilies – 2

Heat 2tsp oil in a small  pan; add the dals, add mustard seeds and once the seeds start to splutter, add all the other tempering ingredients .Use a blender or a mortar and pestle to coarsely grind the tempering along with pieces, tamarind paste, turmeric and salt. Serve with rice.
