Recipes - Eggplant Special

A Pot luck Favorite dish of mine

Baingan and Mirchi Ka Salan

Ingredients

10 long green chillies,or long green peppers
4 Italian eggplants
1/2 tsp mustard seeds
1/4 tsp fenugreek seeds
1/4 tsp onion seeds
1 sprig of curry leaf
1/4 tsp turmeric powder
2 tbps coriander cumin powder
2 tsps chillie powder
4 tbsp tamarind powder or paste
2 tbps chopped coriander
4 tbps oil,salt

Make a Paste
5 cloves garlic
1/2inch piece ginger
1 onion, red preferably
2 tomatoes or tomato paste
3 tbsp grated coconut

Roast and grind
2 tbsp peanuts
2 tbsp sesame seeds
1 tbsp cumin seeds

Heat Oil in a Kadai. Wash and slit the green chillies and cut the eggplant in long strips. Fry in batches till brown and remove. In the same oil,add the mustard seeds,fenugreek seeds,curry leaf,onion seed.Now add the paste and fry for a while. Add the turmeric and coriander-cumin seed powder,chilli powder,and the dry powder masala. Cook till oil floats on top.

Add two cups of water and the tamarind paste or juice and cook until thick. Now add the fried chillie and eggplant pieces,coriander and salt and cook for sometime. The gravy should be thick. Serve hot

Enjoy with rice or chappaties !
