No Cook Pickles

Green Mango Pickle

Unripe Green Mangoes – 2

Salt – 2 tsp

Turmeric Powder -1/2 tsp

Sugar -1 ½ cups

Red Chilies Powder 3-4 tbsp

Asafetida – 11/2 tsp

Method

Wash and Peel the mangoes, chop them into fine cubes. Rub the salt and turmeric into the mango and set aside for two hours. Put them into a clean dry glass jar and mix in the sugar. Keep this in the sun for 2 weeks. Add the red chili  powder and asafetida. Mix well and keep in the sun for 3to 4 days, stirring the pickle once a day with a clean dry spoon.

 

Plum Pickle

Red Plums – 2 pints

Crushed Fennel seeds- 2 tsps

Fenugreek seeds – 2 tsps

Red Chili Powder – 2 tsps

Salt – ½ cup

Mustard oil – 3 tbsp

 

Method

Wash the plums, dry them clean and prick with a fork. In a bowl mix together the fennel, fenugreek seeds, chili powder, salt, 2 tbsp of oil and plums. Fill a glass jar with this pickle and keep in the sun for two weeks. Open the jar, top with fresh mustard oil and cover.

 

Nimbu Ka achaar

Ingredients

Limes – 12

Lare Black Cardamoms - 7

Cumin Seeds - 1/1/2 tablespoons

Cinnamon Sticks – 4 inch sticks

Cloves – 20

Black Peppercorns - 2 tsps

Salt – ¼ cup

Lime Juice – ¾ cup

 

Wash the limes and qipe dry. Cut each in 4 without separating the quarters. Remove the seeds. Grind the cardamom, cumin seeds, cinnamon, cloves, and black peppercorns to a fine powder. Mix in the salt. Stuff the limes with this mixture. Place in a clean dry place for a day under the sun. Add the lime juice, shake the jar well to mix. Keep it in the sun for 2 weeks, shaking the jar once a day
