Recipes - For Raksha Bandhan

Rakhi Gujjia

Ingredients :

Flour- 1/2 cup  (for 50 Gujias)
Khoya- 1 cup
Raisins- a few
Almonds and dry fruits-2 tbsp
Cooking oil - 6 tablespoon for kneading the dough and a substantial amount for deep-frying the Gujias
Water- 1/4cup
Sugar- 1/2cup

Method

Take oil and flour and mix them together so that they are bound together. Now add some water and knead the entire mixture thoroughly. After a while it forms soft dough; now cover it with a damp cloth and keep it aside.The next step involves light frying of khoya in oil and then mixing it with sugar. Than, add almonds, raisins and other dry fruits and fry for a few more minutes. Let the whole mixture cool for some time.Now, take the kneaded dough and start making little rotis. Fill the half of each roti with the khoya mixture and fold the rotis to seal the sides to make sure that the khoya mixture is securely wrapped inside. The edges can be sealed securely either by fingertips in the shape of a gujia. Now the most important part of the preparation. Keep the flames low and deep fry the gujias until they become golden brown. Place the gujias on a newspaper or tissue paper so that the oil drains away.The mouth watering and delicious gujias are ready to be served!


Rawa Barfi

Ingredients:
2 cup semolina (Rava / Suji)
2 cup sugar
1 cup ghee
1 cup mava
1 cup dry grated coconut
Water for making sugar syrup
Almond, kishmish and cashewnuts

Method:
  Grated the mava and keep it aside. Heat the ghee in a deep pan in low flame.Add suji in hot ghee on low flame. Fry the suji until it turns light brown in color. Also ghee appears in top of the suji.  Turn off the flame and add grated mava in it. Mix well with suji and keep aside. : Take a small pan and add sugar and water in it.  Turn on the flame and heat this sugar mixer until they are bubbling. When bubbling is stop and this mixer becomes slightly thick then turn of the flame.Let it cool for 3-4 minutes.After that add this sugar syrup into the prepare suji material.  Mix the half of dry grated coconut in it.Mix well and spared it in big size flat dish. Decorated with half of coconut powder.  After 5 minutes of cooling cut into square shape.Put one almond over each of piece. Serve or store in a cool place

Malpua

Ingredients
1/4 cup plain flour, sifted
water
1 tbsp. powdered sugar
oil for frying

Sugar Syrup
1/2 cup grams sugar
1/2 cup water

Garnish
1/4 teaspoon ground cardamom
Fresh cream

Sugar syrup
Put sugar and water in a saucepan and bring to boil. Simmer for 8-10 minutes till thick syrup is formed. Mix sifted flour, sugar and water to form smooth, medium thickness batter and keep aside for 30 min. Heat oil in a shallow flat bottomed pan. Carefully spread the mixture in the pan and fry till golden brown. Transfer the pancake into the sugar syrup. Serve hot garnished with cardamom, rosewater and fresh cream.
