Recipes - K Is For Kheer

 Kheer

Ingredients:     
  1/2 cup Rice (basmati)
   4 cups Milk
   1/4 cup Raisins
   1 cup Sugar
    1 tsp Cardamom (or nutmeg)
    1/4 cup Almonds (shredded, blanched)
     A few strands of saffron
 
 Method:              
 Wash rice well.Boil milk and add rice. Simmer on low heat for 1 1/2 hours. Stir frequently to prevent sticking.When the rice is cooked and the mixture gets a semi-thick creamy consistency, add sugar and stir well. Remove from heat and add cardamom, saffron,shredded almonds, and raisins.Serve warm or chilled.

Fruit Kheer with a twist

Ingredients
2 large Bananas (peeled and thinly sliced)
 2 large clemetines (peeled into segments with pipe removed)
1/2 tsp saffron strands
2 tsp sugar
1/2 tsp freshly ground black pepper
1/2 tsp red chili powder
 1 tsp salt
 2(140 ml) cartons curd (plain yogurt)

Method
Mix the sugar, pepper, chili powder, salt and curd together.
Add the bananas and oranges and mix together for 2 minutes.
Dissolve the saffron in a tsp of water and sprinkle it over the dish before serving.


Apple Kheer

4 medium sweet apples, peel,core and grate the apples.
4 cups  milk boiled and reduced to half
3tbsp condensed milk
1/2cup sugar
2-3 cardamom peeled and crushed
a pinch of saffron
2 tbsp grated pista

Method
Boil  the milk till it comes to the desired consistancy,add the condensed milk and the sugar...boil for another 2 minutes and add the prepared apples. Bring to a boil and cook for a minute. Add the cardamom pd and saffron. Chill...sprinkle with pista and serve.Take care to sweeten the milk before adding the apples....or else there is a chance the milk might curdle.
