Recipes - D Is For Dals

Dal Bahaduri

1 Cup Urad Dal (split black lentils with skin)
½ cup chana dal (split Bengal gram)
¼ tsp turmeric powder
½ cup sliced onions
2 cloves
1 stick cinnamon
2 dry whole red chilies
2 tsp ginger garlic paste
1 tsp finely chopped green chillies
1 tsp chilie powder
2 tbsp ghee
salt

Clean and wash the dals together. Pressure cook with the turmeric powder, salt and 3 cups of watr for 4 to 5 whistles or until the dal is cooked. Heat the ghee in apan, add the onions, cloves, cinnamon and red chillies and sauté till onions turn golden brown. Add the ginger garlic paste, green chillies and chillie powder and sauté for 2 minutes. Add this to the cooked dal and boil for 4 to 5 minutes. Garnish with cilantro.

Dhabha Dal

½ cup urad dal
¼ cup chana dal
¼ cup rajma
1 tbsp finely chopped garlic
1 cup chopped oinions
2 green chillies
1 cup finely chopped tomatoes
2 tsp cumin powder
1 tsp chillie powder
¼ cup chopped cilantro
1 tbsp kasuri methi
2 tsp oil
salt to taste

Method

Clean wash and soak the three dals overnight.. Drain the soaked dals and rajma and pressure cook for 15 to 20 minutes or until the dals are completely cokked

Heat the oil add the garlic, onions and green chillies and sauté for 4 to 5 minutes till the onions are golden brown

Add the tomatoes, chilli powder, cumin powder and salt and cook over a high flame for 2 to 4 minutes. Add the cooked dals and cilantro and mix well and simmer for another 5 minutes. Add the Kasuri methi and mix well

Whole green Lentils with green coriander and mint
 
Ingredients
3 tablespoons vegetable oil
½ tsp cumin seeds
½ tsp black or yellow mustard seeds
a pinch of ground asafoedita
1-3 dried chillies
4 oz onions peeled and cut into fine rings
2 cloves garlic peeled and chooped
1 meidum size tomato
6 ozs whole green lentils
¾ tsp salt
1 tsp ground coriander
½ teacup chopped green coriander
½ teacup chopped fresh mint

Method

Put the oil in a  pressure cooker and set over high heat. Put in the cumin and mustard seed.Put in the hing and redchillies and stir. Put in the garlic, onion and tomato

Stir till the onion is brown and put in the lentils, 800 ml water, salt,ground coriander, green coriander and mint.Stir and bring to a simmer. Cover and heat down to low and bring up the pressure for 15 minutes
