AAH! Jalapenos!

 AAH ! Jalapenos

Baked Jalapenos

Boiled potatoes: 6 Medium Size
Canola or Olive Oil: 4 Tablespoons
Ginger Powder: 1 Tablespoon
Ground Coriander: 2 teaspoon
Ground Cumin: 2 teaspoon
Ground Cardamom: 1 teaspoon
Ground Cinnamon: 1/2 teaspoon
Amchoor (mango powder): 1 teaspoon
Cayenne pepper: 1 teaspoon
Salt: 1 Tablespoon
 Water: 1/2 Cup
Smash potatoes as if you were going to make mashed potatoes. Add remaining ingredients. It should resemble consistency of hard mashed potatoes, except they are spiced up.
Preparing Jalapeño
Cut each pepper in half lengthwise. With a very small spoon  remove all the seeds and the white membranes. With a teaspoon stuff the filling. After all the peppers are stuffed, lightly dust them with Degi Mirch or Paprika.
Pre-heat oven to 375 ºF. Place the peppers in a non-stick cookie pan. Bake for 25 minutes.

Baked Jalapeno Casserole

2 cans diced chili peppers
3 eggs, beaten
3 cups milk
1 cup Bisquick
1 pound cheese of your choice, grated

Grease 9x13" casserole. Cover bottom with chili peppers. Cover with grated cheese. Mix eggs, Bisquick and milk. Pour over peppers. Bake 45 minutes at 350F.

 Jalapeño Rolls

  6 Fresh jalapeño peppers
   Stick Cheese
    6 corn tortillas

Stuff fresh jalapeños with stick cheese (works good cause you can just stuff it in).Heat corn tortillas till soft ( use toothpicks to hold them together).
Wrap around jalapeño.Freeze for about an hour.
Deep fry until crispy.Tastes great with any dip

Spicy Shish Kebobs

    2 boneless skinless chicken breasts
    1 zuchini
    4 cherry tomatos
    1 yellow sweet pepper
    4 whole jalapeño peppers
    jerk seasoning

Wash chicken and vegetables. Slice zuchini in 1/4 inch square pieces. Cut chicken in 1 inch cubes.Alternate chicken with vegetables. Put jalapeños in middle. Marinade in 1 tbsp jerk seasoning and 1/4 cup ranch dressing for 1 hour.Grill for 15 minutes and serve with rice or salad. Dish can be made vegetarian or with beef.
