Hyderabad-Style Dal Tadka

Hyderabadi-style dal Tadka is a comforting, flavorful lentil dish made with Toor dal, tomatoes, green chilies, garlic, curry leaves, and a fragrant tempering of cumin, mustard seeds, dried red chilies, and ghee. Unlike a very thick North Indian dal, the South Indian version is often slightly lighter and pairs beautifully with steamed rice, chapati, or Jawar roti.

Ingredients — Serves 4

For the dal                                                                                                     

  • Toor dal (split pigeon peas) – 1 cup
  • Water – 3 cups
  • Tomato – 1 large, chopped
  • Green chilies – 2, slit
  • Turmeric – ½ teaspoon
  • Onion – ½ medium, finely chopped (optional)
  • Salt – 1 teaspoon, or to taste
  • Tamarind – 1 small lemon-sized piece, soaked in ¼ cup warm water, or 1 tablespoon tamarind pulp
  • Fresh cilantro – 2 tablespoons, chopped

 

For the Tadka

  • Ghee – 1 tablespoon
  • Mustard seeds – ½ teaspoon
  • Cumin seeds – 1 teaspoon
  • Dry red chilies – 2
  • Garlic – 4–5 cloves, thinly sliced or crushed
  • Curry leaves – 8–10
  • Asafoetida (Hing) – 1 pinch
  • Red chili powder – ¼ teaspoon, optional

 

Method

  1. Wash and cook the dal: Rinse the Toor dal well. Add dal, water, tomato, green chilies, turmeric and onion to a pressure cooker or Instant Pot. Cook until the dal becomes very soft. Mash gently with a ladle.
  2. Add the tang: Add salt and tamarind pulp. Simmer the dal for 5–7 minutes, adding a little water if it is too thick. The consistency should be pourable but not watery.
  3. Prepare the Tadka: Heat ghee in a small pan. Add mustard seeds. When they begin to splutter, add cumin seeds and dried red chilies.
  4. Add the garlic, curry leaves and Hing. Fry on low-medium heat until the garlic becomes lightly golden and fragrant. Turn off the heat and add a pinch of red chili powder if desired.
  5. Finish: Pour the hot Tadka over the dal and immediately cover the pot for 1–2 minutes to retain the aroma. Garnish with fresh cilantro.

For a distinctly Hyderabadi flavor, don't skip the combination of garlic + curry leaves + cumin + mustard seeds + dried red chilies in ghee. Pouring this sizzling Tadka over the cooked dal just before serving gives the dish its characteristic aroma.

Serving suggestion: Serve hot with steamed rice, a spoonful of ghee, and a side of cucumber-onion raita or a simple vegetable curry.
