Recipe: Curd Rice

Curd Rice is a beloved South Indian comfort food that is simple, nourishing, and especially popular during the summer months. Made with soft-cooked rice and fresh yogurt, it is lightly tempered with mustard seeds, curry leaves, ginger, and green chilies for added flavor.

Ingredients

  • 1 cup cooked rice (cooled)
  • Text Box:1 cup fresh yogurt (curd)
  • ¼ cup milk (optional, for creaminess)
  • 1 teaspoon grated ginger
  • Salt to taste

 

For Tempering

  • 1 tablespoon oil
  • ½ teaspoon mustard seeds
  • 1 teaspoon urad dal
  • 1 dry red chili (optional)
  • A few curry leaves
  • A pinch of asafoetida (hing)

 

Optional Garnish

  • Grated carrot
  • Pomegranate seeds
  • Chopped coriander leaves

 

Method

  1. Mash the cooked rice while it is still slightly warm.
  2. Add yogurt, milk, salt, and grated ginger. Mix well.
  3. Heat oil in a small pan and add mustard seeds.
  4. Once they splutter, add urad dal, curry leaves, red chili, and asafoetida.
  5. Pour the tempering over the rice mixture and mix gently.
  6. Garnish with grated carrot or pomegranate seeds and serve.

 

Serving Tip

Serve chilled Curd Rice with mango pickle, cucumber salad, or roasted papad for a complete and refreshing South Indian summer meal. A handful of pomegranate seeds or finely chopped cucumber adds extra freshness and nutrition
