Recipe - Peruvian Quinoa Chaufa

If you are a vegetarain and visting Peru you will probably end up eating a whole lot of Quinoa, Avocado and potatoes. There is a lot of chinese influence in the good and the Chaufa that is popular here has a touch of fried rice flavor for both the quinoa and rice too.

Ingredients

½ cup quinoa

1 small piece sweet potato

¼ cup avocado, diced

7-8 cherry tomatoes, halved

1 tsp avocado oil

1 tsp lemon juice

1/2 tsp soya Sauce

1 tsp olive oil

Salt to taste

Ground pepper as per taste
 

Method

  1. Preheat the oven at 400 degrees F
  2. Wash the sweet potato, peel and dice it. Add salt, ground pepper, and olive oil. Spread it out on a lined baking tray and roast it  for about 25 minutes until cooked and soft. Keep aside until it cools.
  3. Wash the quinoa grains thoroughly.
  4. Boil water in a saucepan and add a pinch of salt to it. Once it boils, lower the heat and add in the washed quinoa and cook for about 15 minutes. 
  5. To assemble the chaufa, place the cooled sweet potatoes in a mixing bowl and add in the quinoa and the soya sauce and mix. Add in the diced avocado, lemon juice and cherry tomatoes.
  6. Dress with avocado oil and olive oil and season with salt and ground pepper.
  7. Check seasoning once, adjust if needed, and garnish with a microgreen like parsley etc
