05/16/2024 Tropical Mango and Macademia Salsa with Tomatoes and Lime 4 tomatoes 1/4-1/2 fresh mild chilli 1-2 scallions 2 tbsps mint 1 tbsp coriander (cilantro) Juice of 1 lime 3 tbsps olive oil 3oz macademia nuts 1 ripe mango pinch of sugar salt, pepper, cayenne papper to taste Dice the tomatoes and chilli, chop the mint, coriander and scallions.Peel and dice the mango. Coarsely chop the macademia nuts, then toast them lightly in an ungreased frying pan.Combine the tomatoes with the chilli, onion, mint, coriander, lime juice and olive oil.Add the macademia nuts, then the mango.Season with the sugar, salt, pepper and cayenne pepper to taste Salsa with a Indian twist Ingredients1 tsp Cumin seeds 1/4 cup diced Cucumber 1 cup diced Tomato 1 small red onion finely chopped 1 green chillie deseeded and finely chopped 2 tbsp Coriander chopped 4 to 5 Mint leaves 1 tbsp Lemon Juice Toast 1 teaspoon cumin seeds in a small pan over a medium heat for 1-2 minutes until fragrant. Immediately remove from the heat and set aside in a small bowl. In a large bowl, combine diced cucumber, diced tomatoes, finely chopped red onion, 1 deseeded and finely chopped green chilli, finely chopped fresh coriander, finely chopped fresh mint and the juice of 1⁄2 lemon.
