CARDAMOM CHICKEN SKEWERS

(Mild Chicken starter flavored with cardamom powder)

 

Ingredients:

1. Boneless chicken pieces : 200 gms

2. Yogurt/curd : 15 ml

3. Ginger : 5 gm

4. Green chilies : 2 nos

5. Coriander leaves : 1 sprig

6. Crushed peppercorn : 2 gm

7. Cardamom powder : 2 gm

8. Salt : to taste

9. Coconut oil : 30 ml

Method:

Clean & cut the chicken into small boneless cubes. Chop ginger, green chilies and coriander leaves. Marinade the chicken pieces with all the ingredients in a bowl except the coconut oil. Combine well and keep it for 10 minutes. Skewer the chicken on bamboo skewers. Heat the coconut oil in a pan and grill the skewers. Serve hot with a salad.

 MANNAN KOZHI POTHI

 Ingredients:

1. Boneless chicken : 200 gms

2. Ginger : 5 gms

3. Green chilly : 5 gms

4. Peppercorn : 3 gms

5. Curry leaves : 2 sprigs

6. Salt : to taste

7. Cinnamon leaves : 20 no’s 

Method:

Clean and mince the chicken, chop ginger, green chilly, curry leaves and crush the peppercorns. Mix all the ingredients with salt and make into equal balls. Place a ball on a cinnamon leaf, flatten it and fold it nicely. Make a fire with charcoal or wood. Cook the parcels over the flame till done. Remove the burned leaves and serve hot with chutney.

Beetroot Vattom

(A dry preparation of Beetroot with spices and tapioca)

Ingredients:

1. Beetroots : 250 gm

2. Shallots : 15 gms

3. Green chilly : 3 gm

4. Ginger : 5 gm

5. Curry Leaves : 1 sprig

6. Crushed black Pepper : 5 gm

7. Tapioca (or Potato) : 50 gm

8. Oil : 30 ml

9. Salt : To taste

 

Method:

Clean and grate the beetroot; clean & par boil the tapioca and grate it. Keep it aside. Heat oil in a pan & add chopped shallots, ginger, and green chilly and curry leaves. Sauté till golden brown in color, add the grated beetroot, salt and cook for some time. Add the grated tapioca and finish with pepper powder. Cool and shape it to small round patties. Grill it to light brown colour before serving. Serve hot with chutney.
