Roots and Shoots, Seeds and grains


6oz Bamboo Shoots rinsed, sliced into pieces
2 Tbsp Rice
3/1/4 oz Shallots thinly sliced
2 Garlic Cloves
3 1/4 oz Spring Onions sliced
Juice of one lime
Salt - 1 tsp
1 tsp granulated sugar
1 spring mint leaves
1tsp  sesame seeds


Sauté the rice in a frying pan till golden brown. Remove and grind to fine crumbs. Mix rice crumbs with shallots, garlic, spring onions, lime juice, salt, granulated sugar, and mint leaves together in a bowl.

Add Bamboo shoots, toss and sprinkle with sesame seeds and serve.
