Vegetable Do Pyaza,

 Ingredients

2 cups mixed vegetables – cauliflower, green beans, carrots

1 cup green peas

2 tomatoes

To be ground to a paste

4- 6- red chillies

2 tsp coriander seeds

¼ tsp turmeric

1 tsp cumin seeds

1 inch piece ginger

4 cloves garlic

½ mustard seeds

1 small onion

 

In 1 tbsp ghee fry sliced onion, add paste and fry till you get a fine aroma ( around 8 minutes).

Add tomatoes , fry for 3-4 minutes and then add the vegetables and 1 cup of water and bring to a boil.

Cook till tender and gravy is thick. Add cream or cashew paste , ½ tsp sugar, salt and mix well. Serve
