CARDAMOM CHICKEN SKEWERS (Mild Chicken starter flavored with cardamom powder)

Ingredients:

1.    Boneless chicken pieces  

2.    200 gms 2.

3.    Yogurt/curd   : 15 ml

4.     Ginger     :     5 gm

5.    4. Green chilies   : 2 nos

6.    5. Coriander leaves   : 1 sprig

7.    6. Crushed peppercorn  : 2 gm

8.     7. Cardamom powder  : 2 gm

9.     8. Salt     : to taste

10.  9. Coconut oil   : 30 ml

 

 Method:  Clean & cut the chicken into small boneless cubes. Chop ginger, green chilies and coriander leaves. Marinade the chicken pieces with all the ingredients in a bowl except the coconut oil. Combine well and keep it for 10 minutes. Skewer the chicken on bamboo skewers. Heat the coconut oil in a pan and grill the skewers. Serve hot with a salad.

 

MANNAN KOZHI POTHI (Traditional preparation of Chicken by the local Tribe)

Ingredients:

 1. Boneless chicken   : 200 gms

 2. Ginger     : 5 gms

 3. Green chilly   : 5 gms

 4. Peppercorn   : 3 gms

5. Curry leaves   : 2 sprigs

 6. Salt     : to taste

7. Cinnamon leaves   : 20 no’s

 

Method:  Clean and mince the chicken, chop ginger, green chilly, curry leaves and crush the peppercorns. Mix all the ingredients with salt and make into equal balls. Place a ball on a cinnamon leaf, flatten it and fold it nicely. Make a fire with charcoal or wood. Cook the parcels over the flame till done. Remove the burned leaves and serve hot with chutney.
