Pumpkin & coconut soup (A thick soup with Pumpkin and Coconut milk)


Pumpkin: 2 cups chopped

Ginger: 2 tsps

Garlic : 2 tsps

Curry leaf : 1 sprig

Green chilly : 1

Turmeric powder: 1 tsp

Salt: To taste

Coconut milk: ΒΌ cup


Peel the pumpkin and make it into cubes. Boil it with chopped ginger, garlic, curry leaf, green chilly, turmeric powder and salt. Cook the pumpkin till it mashed well or to a puree form. Add the coconut milk and check the seasoning. Serve hot.


Lemon Grass and Raw Mango Soup


Lemon grass : 2 bunches

Mixed vegetables : 1 cup ( carrots, potatoes)

Ginger: 1 tsp

Raw mango: 2 tsp

Salt: to taste

Sugar: to taste

Method:    Clean and tie the lemon grass into a bundle. Peel and cut the vegetables and raw mangoes into small cubes. Boil all these ingredients with chopped ginger and salt. Cook for 20-30 minutes and discard the lemon grass bunches. Puree the rest and strain well. Season with salt and sugar. Serve hot.
