Recipes - Kale Is Cool

Ingredients
Kale - 1 bunch
Garlic - 5 cloves (sliced)
Onion - 1 medium (finely chopped)
Salt - 1/4 tsp (adjust per taste)
Water - 1/4 Cup

To season
Oil - 1 Tbsp
Mustard seeds - 1/4 tsp
Broken Urad Dal - 1/2 tsp
Jeera - 1/4 tsp
Dry Red Chilli - 2

Instructions
First wash the kale nicely, remove the center spine and chop up the leaves into small pieces. Keep aside. eat a large pan with oil and add the mustard seeds. Once it splutters, add the remaining ingredients given under seasoning. Once the urad dal turns golden, add the sliced garlic and saute for a minute. 
Then add the chopped onion and continue to saute until the onions are brown,Now add the salt, chopped kale and about 1/4 Cup of water to the pan. Continue to cook in medium flame, sautéing frequently, until all the water evaporates and the kale is cooked fully. Turn off the flame.



Kale with Chana Dal

Ingredients
1/2 tsp of mustard seeds
1 tbsp of urad dal
A strand of curry leaves 
4-5 red chilly
1 tsp of cumin seeds/ jeera
Chopped green chilly - 1-2
1 tbsp of finely chopped ginger
1 tbsp of finely chopped garlic 
3/4 cup of grated coconut
3-4 shallots - finely chopped
1/2 cup of chana dal
1/2 tsp of turmeric powder
2 tbsp of oil
A bunch of Kale
Salt to taste

Method

Wash the bunch of kale thoroughly. Cut out the leafy portion of the kale and chop it. Keep them separate.In a pressure cooker, cook the yellow chana dal. Keep it aside.In a pan, pour in the oil  and drop in the mustard seeds. Once they splutter, add the urad dal,curry leaves and red chilly. Once the dal gets roasted, drop in the cooked yellow split pea, chopped kale and turmeric powder and salt. Add little water for it to cook.Cover it and let it cook for 2 mins so that the leaves get steamed and cooked well.
Meanwhile, grind the jeera,green chily, ginger, garlic,coconut and shallots with 1-2 tbsp of water and add it to the wok. Mix it well and cook it till the water evaporates.
