Jalapeno Poppah Aapah

Ingredients

Dosa batter- using basic recipe of 1 part urad dal to 3 parts of rice + some fenugreek/ methi seeds
Sea salt to taste (if your batter does not have salt already added to it)
1 small red onion, diced
1 or 2 pickled jalapenos, diced
1 teaspoon grated fresh ginger
For the filling-

2 tablespoons light veggie cream cheese
2 tablespoons grated extra sharp cheddar or a combination of extra sharp cheddar and your favorite cheese
2 to 3 pickled jalapenos, diced (or to taste)
A teaspoon of oil or oil spray

To make the Jalapeno Poppah Aapah- 

To the dosa batter, add salt, if needed. If making the spiced batter, add the diced onion, jalapenos and grated ginger too.
Mix together all the ingredients for the filling.
Heat the appe pan on medium heat. Drizzle a couple of drops in each indentation or spray with oil. Add batter to each indentation until it is half full.
Top with the cream cheese mixture. Add more batter on top, to cover the filling.
Cover and let it cook for about 2 to 3 minutes. Remove cover, lightly brush aape with oil and turn them in the pan. Cook for another 2 minutes or so.Remove from pan and serve with quick chutney or with the store bought green chutney. Enjoy!

Kothimbir Vadi Waffle

Ingredients-

1 cup besan or chick pea flour
5 teaspoons idli rawa or cream of parboiled rice
1 teaspoon roasted coriander seed powder
½ teaspoon roasted cumin seed powder
1 teaspoon toasted sesame seeds
½ teaspoon turmeric powder
1 teaspoon red chili powder ( or to taste)
1 teaspoon brown sugar
Salt to taste
1 cup chopped coriander/ cilantro leaves
½ teaspoon grated fresh ginger
1 clove of garlic, grated
1 tablespoon oil
¾ ~1 cup water
½ teaspoon baking soda
Oil spray for greasing the waffle iron
To make the Kothimbir Vadi Waffle-

In a bowl, mix the dry ingredients –besan, idli rawa, coriander and cumin seed powders, sesame seeds, turmeric and chili powders, brown sugar and salt.
Combine well and add the chopped coriander leaves, grated ginger and garlic and the oil. Stir in the water gradually to make a batter the consistency of pancake or uttapam.
Preheat the waffle iron. Spray with oil and put in 2/3 cup batter for a Belgian waffle iron. Let it cook for about 4 minutes, or until golden brown and crisp on the outside and cooked and fluffy on the inside.
Serve with green chutney, if desired.
