Sandesh

500 gms. of paneer
375 gms. of sugar. 
Green elaichi
Few drops of essence ( like kewda water , rose water)


Knead 500 gms. of paneer into a smooth paste. In a pan fry the kneaded paneer and sugar over mild heat stirring all the time. Remove from the heat when the mixture-leaves the sides of the pan and when the sugar has melted. Then you can add essence or grinded green elaichi for a finer taste. Form into balls or press into moulds to shape. Cool and serve it .

 

Malpua

Suji : 100gms
Flour: 300gms
Large black Cardamom seeds: 3 or 4
Oil for frying
Sugar:1.5kg
a pinch of sodium bi carbonate 


For Syrup: In 2 liters of water 1.1kg of Sugar should be added, boiled and cooled and kept aside to add the malpoa in it. 
Mix together, the flour and suji adding enough water to make a thick batter and keep aside for 5 to 6 hours because suji has to melt. Then add the cardamom seeds, a pinch of salt and sugar and sodium bi carbonate and stir well. Heat oil in a small pan. Deep fry one spoonful of batter at a time into mildly simmering oil. The batter spreads to make malpoas of 5 inch diameter approximately. Soak in prepared syrup. Cool it. Remove from syrup to serve.

 

Boondi

Besan: 300gms
A pinch of bicarbonate of soda
Powdered rice: 50gms 
Oil for deep frying:1 and half cup
Sugar: 6 cups


In a pan heat together 6 cups of sugar and 6cups of water. Let it boil and simmer until the syrup is of medium consistency. Remove from fire and allow it to cool. Blend together besan and 1 and half cup of water. Mix the powdered rice and bicarbonate of soda. Heat oil in a deep pan and through a jhanjri, pour the besan mixture on the hot oil. Fry until crisp not brown. Remove from oil with a slotted spoon. Drain out the oil in a paper. While still hot pour in the prepared syrup. Continue this until the besan mixture is over. After the Bonde is soaked in the syrup remove with a slotted spoon and spread on a flat dish.


Kheer

Basmati rice: 1/2 cup
Milk: 2 liters.
Sugar: 4tbsp. 
Few raisins.
Sliced almonds,
Ghee: 1 tbsp . 
Chopped cashew nuts
Green cardamom : 2 nos
Rosewater : Few drops 

 Wash rice and dry it on a plate and keep aside. Heat milk in a large pan. Simmer until it is reduced to 3 quarters its original volume. Add 1 tbsp ghee to washed rice and mixed it . After that add to that milk. Add sugar when the rice is tender. Continue cooking until milk is reduced to half and thickens. Add the raisins, almonds and chopped cashew nuts,green cardamom pewder . Remove from heat and add rose water. Cool and serve.
