Leela Darbha 09/23/2015 Stuffed Cukes 6 small cukes 2 tbsp of Coriander seeds 4 dry red chillies 1/4 cup roasted peanuts 1 tsp Amchur Powder Salt Dry roast the spices and peanuts and grind in a blender. Add amchur powder and salt. Make small slits in the cukes and fill with this blended spices. Add 2 tbsp of olive oil in a pan and arrange them in a single layer. Cover and cook for 15 minutes till cucumbers are cooked and infused with the spices. Serve hot with chapatties ------------------------------------------------------------------- Ingredients: Turmeric – 1 tsp For Tempering 1 tbsp grated gur/ molasses
Heat 2tsp oil in a small pan; add the dals, add mustard seeds and once the seeds start to splutter, add all the
other tempering ingredients .Use a blender or a mortar and pestle to coarsely
grind the tempering along with pieces, tamarind paste, turmeric and salt. Serve
