TEEWARN (Sindhi Mutton)

Ingredients
1 kg mutton chops
4 onions
4 tomatoes
4 green chillies
1 1/2 tsp ginger garlic paste
3 tsp red chilli powder
2 1/2 tsp coriander powder
1/4 tsp turmeric powder
4 cardamoms
1 tsp cumin seeds
2 cloves
3 bay leaves
2 tbsp curd
6 tbsp oil
salt to taste
Procedure
Chop onion, green chillies and tomatoes
Fry onion, green chillies, ginger garlic paste, cumin seeds, cloves, cardamom and bay leaves till onion turn golden brown Add the mutton and salt Cook till water dries up from the mutton Add tomatoes and leftover masalas and curd Cook for 30 minutes till the oil separates, cook on low flame till mutton is tender.

SAI BHAJI

Ingredients
2 bunches of spinach
1 big onion
1 big potato
1 brinjal
2 tomatoes
6 green chillies
1 tsp cummin seeds
1" ginger
1 tsp red chilli powder
4 tbsp gram dal
1 1/2 glass water
6 tbsp oil
4 pinch of turmeric
Procedure
Separate the spinach. Chop it finely Chop the onions, potatoes, brinjal into small pieces and set aside Soak gram dal for 10 minutes Heat oil in pressure cooker, put in cummin seeds, green chillies, ginger and fry for about a minute Add chopped onions, potatoes, brinjal Fry all vegetables, till the oil comes out Now put in the chopped spinach, tomatoes, dry masalas, dal, salt, green chillies and cook.

SINDHI CURRY

Ingredients

4 medium size tomatoes
1 1/4 cup tur dal
5 tbsp gram flour
150 gms Okra
5 tbsp oil
100 gm beans
A few curry leaves (kari patta)
1 tsp cumin seeds
1/2 tsp fenugreek seeds (methi)
1/2 tsp asafeotida powder (hing)
1/2 tsp turmeric powder
2 1/2 tsp red chilli powder
5 green chillies
6-7 kokam
8-10 glasses of water
salt to taste
Procedure

Soak tur dal in water for 1 hour Cook it in a pressure cooker for 10-12 minutes along with tomatoes and 2 glasses of water Strain out all the water and let remaining pulp cool, squeeze out the soup from it. Heat oil in a heavy bottomed vessel for a few minutes before adding cumin seeds, fenugreek, asafoetida powder and green chillies Fry for a minute and add gram flour (besan) and then fry again for a couple of minutes more. Add red chilli powder and turmeric powder Fry till the gram flour becomes aromatic and turns slightly brown in colour Ad stock to it immediately. Stir well. Add okra, beans, curry leaves, kokam and salt Let it boil on a low flame for 2 hours till the vegetables are well cooked and have absorbed the flavour of the spices.

TOSHA
Ingredients
For the Tosha
250 gm plain flour
1/2 tsp cooking soda
1/2 tsp salt
1/2 cup oil
1/2 cup curd
For the Syrup

2 1/2 cup sugar
3 cups water
Procedure
1. Sieve plain flour
2. Add salt and soda
3. Add a spoonful of oil and curd into the mixture and knead into stiff dough
4. Make long thin rolls like kababs
5. Fry on a slow flame till golden in colour.

For Syrup
1. Dissolve sugar in water and boil till the syrup thickens in consistency.
2. Put a few toshas at a time into a vessel and stir them in a syrup.
3. Remove, cool and store in container.
