Recipes - What Should I Do With The Left Overs After Thanksgiving?

 After a fabulous thanksgiving party you are now looking at the leftovers and wondering " what to do?".

Mark Bittman offers a variety of choices: For eg here is how you can combine mashed potatoes and turkey to create a delicious new dish.

Mashed-Potato-and-Turkey Croquettes

Stir together mashed potatoes, chopped cooked turkey, chopped onion, beaten egg (about 1 per cup) and enough all-purpose flour to bind. (A little sage or thyme is good, too.) Roll into balls and dredge first in flour, then in beaten eggs, then in bread crumbs. Cook in olive oil until browned all over. Serve with cranberry or applesauce and sour cream.

The U.S. Food and Drug Administration suggests these safe storage tips for holiday treats to be eaten later:

Cut up the turkey into small pieces to store in the refrigerator.

Separate leftover stuffing and store it in a separate container from the turkey.

Place leftovers into shallow containers, and refrigerate within two hours of cooking.

Eat or freeze leftover turkey and stuffing within four days.

Thoroughly reheat leftovers to an internal temperature of 165 degrees Fahrenheit, until they appear steaming hot.
